If you can connect using the sim to the internet on Three it means the settings are okay, have you tried using your phone in a built up area? (i.e another area) and if so was it any better?
also, try going to mobile networks and try manually select a three network instead of using the automatic feature. Three have quiet a few masts so you should see like
Try selecting one of the other networks and see if 3G works for you... can you do this now and report back?
U say you see O2 ireland apns, is this an O2 SIM?
IF it is an O2 sim can you try these settings instead
name: o2 Ireland (this can be anything)
proxy: <not set>
port: <not set>
username: <not set>
Password: <not set>
Server: <not set>
mms proxy: 188.8.131.52
mms port: 8080
authentication type: <not set>
apn type: <not set>

No this is a 3 sim I received 3 or 4 days ago - It came with an I Phone which I gave to my girlfriend - Just looking at the networks available now
there are 4 as follows

the networks I can see are exactly as follows (4 options)
2. vodafone IE
Selecting either 1 or 4 does not improve my internet and it stays the exact same with no 3G or 4G. Only these options appear when searching networks
